These puff pastry strawberry pop tarts are super simple to make! You literally need two ingredients (and 3 ingredients for the icing). While they would be delicious any time of year, I was inspired to make these for Valentine's day.

I didn't grow up eating pop tarts, but I was always fascinated by them. Trying them as an adult, they're not as good as I had hoped, but making your own is fun, nostalgic and I think they taste better!

  • Puff pastry: it should be cold but not frozen.
  • Jam: I like to use homemade strawberry jam, but you can use store bought jam, and any flavour you want.
  • Red food colouring: I used about 1-2 drops to get a lovely light pink colour. You can omit the food colouring or use beet juice for natural colouring.

Additions & Substitutions

  • Sprinkles: add a little sparkle to these pop tarts with some fun sprinkles! I didn't have any on hand, but I think they would be a really fun addition.
  • Different jam: I used strawberry jam, hence the strawberry pop tart. But if you don't have strawberry jam, these will definitely work with any other type of jam.
  • No food colouring: I used one drop of food colouring to get a light pink icing. However, if you don't want to use food colouring you could try using beet juice to add some pink. I have not tried this, but I imagine it would work!

How to Make These Puff Pastry Strawberry Pop Tarts

  • Step 1: Cut your puff pastry into 12 equal squares. Use a fork to dock each square.

  • Step 2: Divide the jam equally among 6 of the squares, spreading it in the middle, leaving a little bit of edge.

  • Step 3: Put a top square over each jam square, and use a fork to gently seal the edges.

  • Step 4: Repeat with all 6 pop tarts, then put on a parchment paper lined baking sheet. Bake at 375F for 20-23 minutes.

  • Step 5: Meanwhile, make your icing. Add milk, powdered sugar and food colouring to a small bowl. Mix to combine and set aside.

Ingredients
  

  • 1 sheet puff pastry, thawed
  • ½ cup strawberry jam

Icing

  • ½ cup powdered sugar
  • 1 ½ tablespoon milk of choice
  • 1-2 drops red food colouring

Instructions
 

  • Preheat oven to 375 °F
  • Unfold the puff pastry sheet on a lightly floured surface. Cut into 12 equal sized (about 3.5-inch) squares. Prick each square a few times with a fork.
  • Add 1-2 tablespoon of jam into the centre of 6 squares. Spread the jam out, but not right to the edge. Leave a little bit of a border.
  • Add a puff pastry square on top of the jam square, and use a fork to pinch the edges to seal the two squares together. Repeat until you have 6 pop tarts.
  • Add to a parchment paper lined baking sheet, and bake for 20-23 minutes or until golden brown.
  • While the pop tarts are baking, make your icing. Add powdered sugar and milk to a small bowl. Mix well until you have a consistency that drizzles. Add a little more sugar or milk if needed. Add red food colouring to reach a light pink colour.
  • Once your pop tarts are done, transfer to a wire rack and let them cool. Then drizzle with icing.
  • Enjoy!

Notes

JAM: you can swap the strawberry jam for any flavour. Maybe switch up the colour of the icing to match (but that's optional).
FILLING LEAKING: it could mean you added too much filling, or you didn't seal the top and bottom puff pastries well enough.

    1. Hi Kate, I haven't tried freezing them, but I imagine it would work. I would hold off adding the icing if you're going to freeze them, and I would freeze them flat on a baking sheet before transferring to a bag (otherwise they will stick together). Reheat in the oven and then add your icing. They will probably last in the freezer for a couple months. If you're keeping them in the fridge, they will likely last a couple days. Hope that helps!
