These pop tarts are super simple and really only have 2 ingredients. While you can make them any time of year, they would be perfect for Valentine's Day!
Unfold the puff pastry sheet on a lightly floured surface. Cut into 12 equal sized (about 3.5-inch) squares. Prick each square a few times with a fork.
Add 1-2 Tbsp of jam into the centre of 6 squares. Spread the jam out, but not right to the edge. Leave a little bit of a border.
Add a puff pastry square on top of the jam square, and use a fork to pinch the edges to seal the two squares together. Repeat until you have 6 pop tarts.
Add to a parchment paper lined baking sheet, and bake for 20-23 minutes or until golden brown.
While the pop tarts are baking, make your icing. Add powdered sugar and milk to a small bowl. Mix well until you have a consistency that drizzles. Add a little more sugar or milk if needed. Add red food colouring to reach a light pink colour.
Once your pop tarts are done, transfer to a wire rack and let them cool. Then drizzle with icing.
