Puff Pastry Strawberry Pop Tarts

These puff pastry strawberry pop tarts are super simple to make! You literally need two ingredients (and 3 ingredients for the icing). While they would be delicious any time of year, I was inspired to make these for Valentine’s day.

  • Fun: I didn’t grow up eating pop tarts, but I was always fascinated by them. Trying them as an adult, they’re not as good as I had hoped, but making your own is fun, nostalgic and I think they taste better!

What you need to make these puff pastry strawberry pop tarts

You need two(!) ingredients to make these! Okay, maybe a couple more ingredients for the icing, but if you use pre-made icing then it’s only 3 ingredients. All the ingredient quantities are in the recipe card below.

  • puff pastry
  • strawberry jam
  • powdered sugar
  • milk of choice
  • red food colouring

Additions & Substitutions for these puff pastry strawberry pop tarts

Additions

  • Sprinkles: add a little sparkle to these pop tarts with some fun sprinkles! I didn’t have any on hand, but I think they would be a really fun addition.

Substitutions

  • Different jam: I used strawberry jam, hence the strawberry pop tart. But if you don’t have strawberry jam, these will definitely work with any other type of jam.
  • No food colouring: I used one drop of food colouring to get a light pink icing. However, if you don’t want to use food colouring you could try using beet juice to add some pink. I have not tried this, but I imagine it would work!

Should I use homemade or store-bought puff pastry for these strawberry pop tarts?

I would stick with store-bought, since it’s way easy and more convenient. But if you want to make your own and use that, go ahead!

How do I keep the puff pastry pop tarts from leaking?

Seal the edges tightly with a fork and avoid overfilling. Chilling the filled tarts for 10–15 minutes before baking also helps.

How long do puff pastry strawberry pop tarts last?

Store in an airtight container at room temperature for 2–3 days. You can also refrigerate for longer storage.

Ingredients
  

  • 1 sheet puff pastry, thawed
  • ½ cup strawberry jam

Icing

  • ½ cup powdered sugar
  • 1 ½ Tbsp milk of choice
  • 1-2 drops red food colouring

Instructions
 

  • Preheat oven to 375 °F
  • Unfold the puff pastry sheet on a lightly floured surface. Cut into 12 equal sized (about 3.5-inch) squares. Prick each square a few times with a fork.
  • Add 1-2 Tbsp of jam into the centre of 6 squares. Spread the jam out, but not right to the edge. Leave a little bit of a border.
  • Add a puff pastry square on top of the jam square, and use a fork to pinch the edges to seal the two squares together. Repeat until you have 6 pop tarts.
  • Add to a parchment paper lined baking sheet, and bake for 20-23 minutes or until golden brown.
  • While the pop tarts are baking, make your icing. Add powdered sugar and milk to a small bowl. Mix well until you have a consistency that drizzles. Add a little more sugar or milk if needed. Add red food colouring to reach a light pink colour.
  • Once your pop tarts are done, transfer to a wire rack and let them cool. Then drizzle with icing.
  • Enjoy!
