This rosemary paloma mocktail is a refreshing drink that you can serve at your next dinner party. It’s the perfect balance of sweet and tart.

You will need to make simple syrup for this drink. If you don’t know how, check out my rosemary simple syrup recipe.

What you’ll need to make this paloma mocktail recipe

You’ll need the following to make this drink:

  • Rosemary simple syrup: you can find my rosemary simple syrup recipe here. You want your syrup to be cool, or at least room temperature. So I suggest making your simple syrup at least a couple hours before you need it.
  • Grapefruit juice: I prefer to make my own grapefruit juice. I squeeze and strain to remove any seeds or pulp. To save time, you can also use boxed grapefruit juice.
  • Sparking water: this adds some bubbles to the drink. If you don’t need to make it a mocktail, you can replace with champagne or sparkling wine.
  • Fresh rosemary: this is for a garnish. It’s optional, but makes the final drink look very nice.
  • Fresh grapefruit: this is also a garnish, and also optional, but I encourage it.

Substitutions

  • Make it a cocktail: if you’d prefer to make this a cocktail, simply replace the sparking water with Prosecco or another sparking wine.

Ingredients
  

  • 1.5 oz rosemary simple syrup
  • 4 oz grapefruit juice, freshly squeezed
  • sparkling water (or Prosecco)
  • ice
  • 1 sprig, fresh rosemary for garnish
  • 1 thinly sliced grapefruit for garnish

Instructions
 

  • To a tall glass, add lots of ice.
  • Add rosemary simple syrup and grapefruit juice. Fill the remainder of the glass with sparkling water (or Prosecco). Stir to combine.
  • Garnish with a spring of fresh rosemary and thin slice of grapefruit.
