Strawberry Basil Bruschetta

Ingredients

cup
strawberries, fresh
diced
½
cup
cherry tomatoes
diced
¼
small cooking onion
diced

tablespoon
basil, fresh
thinly sliced

tablespoon
mint, fresh
thinly sliced

olive oil, divided

teaspoon
balsamic vinegar
salt & pepper

Instructions
Preheat oven to 400℉.
Place baguette slices on baking sheet. Brush slices with 1 tablespoon olive oil. Bake for 5 minutes, or until slightly brown on the edges.
Meanwhile, add strawberries, tomatoes, basil, mint, and onion to a small bowl.
Add ½ tablespoon olive oil, balsamic vinegar, salt and pepper to taste. Toss to combine.
When baguette slices are done, remove from oven and let cool for approximately 3-5 minutes, or until cool enough to handle.
Top each slice with 1-2 tablespoon of strawberry mixture.
Sprinkle with 1 teaspoon flakey salt.
Serve immediately.
