In a small bowl or container, muddle (gently crushing) the blueberries. This will remove the juices from them. Use a muddler, pestle, or fork. Then strain to remove any blueberry skins. You'll need 2oz of juice for one (1) drink.
Add lemon juice, muddled blueberry juice and lavender simple syrup to a mason jar or shaker. Shake well to combine.
Pour into an ice filled glass and top with sparkling water. Stir gently to combine.
Serve with a lemon wheel, fresh blueberries or a sprig of lavender. Enjoy!
LAVENDER SIMPLE SYRUP: follow my recipe for rosemary simple syrup (here), but replace the rosemary with 2 tablespoon of dried lavender. And use culinary lavender. I get mine from the Bulk Barn. BLUEBERRIES: I have only ever used fresh blueberries for this recipe, so I can't speak to how previously frozen berries will work.MUDDLED BLUEBERRIES: once they are muddled, past them through a sieve to remove the seeds and skins. MAKE IT A COCKTAIL: add 1 - 1.5oz Prosecco, gin or vodka.
