I partnered with Rubicon Exotic to create this Mango Passionfruit Spritz.
This Mango Passionfruit Spritz is the perfect cocktail to enjoy any time of year. It’s easy to make, but feels elegant enough to serve at a party or special occasion. I made this drink for a bunch of friends over Thanksgiving, and it was a huge hit. It’s similar to an Aperol spritz, but better! The sweetness from the mango, and tropical tang from the passionfruit pair well with the bitterness of the Aperol, making this a cocktail you’ll want to make again and again.

What you’ll need to make this Mango Passionfruit Spritz

All the ingredient quantities are in the recipe card below.
- Rubicon Mango Passionfruit 100% Juice Blend: this ingredient is the key to making this drink feel like you’re relaxing on a beach somewhere. It’s an exotic juice blend, and can be a little difficult to find, but I’ve seen it at Loblaws and Freshco.
- Sparkling wine: use any sparkling wine you want, just make sure it’s cold!

Substitutions
- Make it less boozy: if you want to reduce the alcohol, I suggest keeping the Aperol, and instead of the sparkling wine, you can use just sparkling water instead. Or if you can find a non-alcoholic sparkling wine, that would be a good substitution.
- Make it a mocktail: if you want to make this drink a mocktail, that’s great! But it will taste a little different without the Aperol. You can use just the Rubicon Mango Passionfruit 100% Juice Blend and sparkling water, almost like a mimosa! Or if you’re able to find non-alcoholic sparkling wine, use that and sparkling water!

You can! If you want to make this drink a mocktail, that’s great! But it will taste a little different without the Aperol. You can use just the Rubicon Mango Passionfruit 100% Juice Blend and sparkling water, almost like a mimosa! Or if you’re able to find non-alcoholic sparkling wine, use that and sparkling water!
You can mix the Aperol and the Mango Passionfruit juice, but don’t add the ice, sparkling wine or the sparkling water until you serve it, or it will be watered down and flat by the time you drink it. You could also prepare your garnish ahead of time.
I like to garnish with a couple thin slices of mango. You could also garnish with half a passionfruit, and have it floating on top of the drink.
You could add frozen mango to this drink to make it like a slushy. I would add the Rubicon Mango Passionfruit 100% Juice Blend and some frozen mango to a blender until you get a slushy consistency. Divide that among glasses, then mix in the Aperol, and sparkling wine. I would probably skip the sparkling water if you’re making it this way.
If you’re not able to find Rubicon Mango Passionfruit 100% Juice Blend, the Rubicon Mango Dragonfruit 100% Juice Blend is a great alternative!
Mango Passionfruit Spritz
Ingredients
- 1 oz Aperol
- 2 oz Rubicon Mango Passionfruit Juice Blend
- 2 oz sparkling wine
- sparkling water
- 2 slices mango cut thinly
Instructions
- To an ice filled glass, add Aperol, Mango Passionfruit juice, sparkling wine and sparkling water.
- Stir gently to make sure everything is combined.
- Add a couple slices of mango inside the drink, along the inside of the glass.
- Enjoy!
